Roadside Diner

Given the cooler temperatures, my thoughts turned to comfort food. Here are two favorites from The Princess Mom's recipe box:

Hot Potato Salad

6 cups boiled, sliced potatoes
6 slices of bacon cut in 1/2" pieces
1 onion, chopped
2 tsp. flour
1/3 c. cider vinegar
1/2 c. water
3 tsp. sugar
1/2 tsp. salt
1/8 tsp. black pepper

Preheat oven to 350 degrees. Arrange potatoes in a greased casserole dish. Cook bacon over low heat till cooked, but not crisp. Add onion and cook till glassy. Add flour. Stir until bubbly. Stir in vinegar, water, sugar, salt and pepper. Bring to a boil. Cook for 2 minutes, stirring well. Pour over potatoes. Bake for 25 minutes.

Spuds ala Elegante

8 oz. cream cheese
4 cups hot mashed potatoes (works fine with leftovers!)
1 egg, beaten
1/3 cup finely chopped onion
1/4 c. pimientos
1 tsp. salt
Black pepper to taste

Blend all ingredients. Back in a 1 quart casserole at 350 degrees for 45 minutes.
